On the Menu: Memorial Day
I hope everyone had a wonderful and safe Memorial Day! Today I hosted a little get together at my house and made beef short-rib kabobs and a lemon tart, also on the menu was potato salad (courtesy of Trader Joes, there is only so much a girl can throw together last minute). I was an extreme procrastinator, so last minute in fact that I literally bought everything this morning on a quick grocery store run. With that said, everything turned out great and was the perfect meal for the unofficial start to summer.
The lemon tart is my go-to dessert staple as it is easy, delicious, and most, if not all the ingredients are probably already in your pantry/ fridge. You can find the recipe here and I will be making a video to accompany this recipe soon enough. I recommend making this anytime you need an easy to whip up dessert that is sure to impress.
As for the kabobs, TBD on that recipe. I promise I will make one as they were delicious and I would love to share how to recreate them! I kind of just threw the kabobs together really quick, as was previously mentioned I am a procrastinator and therefore had no time to create a recipe and write it down; sometimes you just got to wing it. What I can tell you is that I used boneless beef short-ribs, onions, green bell pepper and made a marinade from worcestershire sauce, A-1 steak sauce, garlic, olive oil, and dill. Now in what amount? That is the to be determined portion, but I swear I will get back to everyone with a detailed recipe this summer.
Here’s the spread we had going on today:
